I don't know what they use, but in my experience, sites that require
very intensive statistical and transactional capability are often better
built as a custom application.  I don't think any available CMS would be
very efficient in managing and analysing huge amounts of numerical data.

The other possibility is that one or more vertical market applications
for this purpose probably exist, given the large number of betting sites
around.  

Another example of such a site would be a stock broking site - very
transactional and data intensive, and not really suitable to be spat out
of a CMS.  But there are several platforms which perform just stock
broking tasks out of the box.
