UML Activity Diagrams can be used to express workflows. The chapter of the
UML specification at http://cgi.omg.org/docs/formal/01-09-74.pdf, section
3.84, describes how to draw activity diagrams. Most sources agree that
activity diagrams are sufficient to model workflows, especially when used in
conjunction with other UML diagrams, particularly State Diagrams.

I have published some very basic information and examples on using UML for
metadata/taxonomy/ontology modeling at:
http://www.dynamicdigitalmedia.com/uml_modeling.html

There are only two examples on the page, but there will be more information
in conjunction with the Visio plug-in release that I mentioned in my prior
post.

I would appreciate any and all feedback. Please send to me directly.
