Never having had to use Notes, I don't know what you mean by "choose a 'best match'"; what do you mean? At what point does it guess? I ask because MIME encoding specifies the character set, so I'm not sure why Notes would ever *need* to guess. Just trying to avoid you going down a rabbit hole... ...phsiii
