No experience with a C&C 41 but I have a wing keel on my 37+. Not having experienced anything else in the 37+ model line I can't tell you how it compares but I can tell you that it can't get much better. It points great and is exciting to sail.
Your best bet would probably be to look at the PHRF ratings. Its pretty evident how changes like rig height and keel design affect (or don't) the performance of boats of the same model. http://www.ussailing.org/wp-content/uploads/DARoot/Offshore/PHRF/2014%20PHRF%20Handicaps%20Data.pdf Page 24 Make sure the rating is for the same class/fleet. Then try to get same locales and model year.
