It seems that it depends on the mail client. If the message is sent as "Plain Text" it arrives as plain text. If it is sent as HTML, some mail clients unwrap it and present it as text; others show it as an HTML attachment.
It is quite possible that this has nothing to do with the server that the List is using but has to do with some change that was implemented in some of our mail clients lately.
