You choose what happens.  Log files are not set by DocumentRoot.
Two different sites are two different sites are two different
sites.

You can make them have the same DocumentRoot and different logs.
Or the same logs and different DocumentRoot.  What you configure
to be the same will be the same.  What you set as different will
be different.
