You will need to change all sites in the ui to the same ip and also change the dns to reflect the new ip. As long as your mail clients are using a hostname (i.e. mail.something.com) to connect to the mail server and not the ip you should not have any problems. The downside to virtual hosting is that individual site can not be accessed via the ip. You can however add an aliased sub-domain (maybe cilent1.domain.com) to a virtual site so it's viewable in the same fashion as the ip.
