This is just asking for "My two cents", so here it is.

Install SquirrelMail (squirrelmail.org) or neomail/acmemail/other
webmail program on the server.  Install SSL on the site.  Check your
e-mail through a webbrowser using SSL.

This is my preferred way.

Alternatively, install SSH, SSH into the server.  Mutt or Pine your
e-mail.  (for the die-hard cli fans).
