If you do a search in this list's archives, or those of 
http://www.webhostingtalk.com/ you will find some good pointers on server 
security.
As a general rule turning off services that you don't need and closing 
unneeded ports is a good start.
Don't give out shell accounts unless you trust the user

There's a lot of other small little things you can do ...
