I have NFS hooked up via autofs and haven't had this problem. I highly suspect /var/tftpboot/.fc8/initrd.img & vmlinuz are not the Xen versions. Most likely you got them out of the wrong directory in the tree (not "xen") but the standard installer directory. Import helps with this, if you do distro add manually you must also make a distro called "f8-xen-i386" or equivalent.
