Although Big Nerd Ranch's Cocoa Bootcamp is great for people just starting in Cocoa, it does have sections on Bindings, Core Data, Applescript-enabling your app, custom views, and other advanced topics. I can tell you that your head is chock full when you leave. In my experience, even though I had already read Kochan's Obj-C book and Aaron's book before I went to his Boot Camp, the camp very much "set in place" the ideas of Cocoa in my head in a way that I can't imagine a book doing. It was an amazing week.
