TextMate (free) does a reasonable job of syntax coloring and has a ‘Tidy’ 
command to pretty-print the source.

You could also just run the files through /usr/bin/tidy to do the 
pretty-printing, then view them with Xcode for the syntax highlighting.

I’ve heard that for serious XML wrangling the Oxygen editor is good, although I 
think it’s (a) not free, and (b) has an ugly cross-platform UI.
