If that does not pan out, then how about someone else run an "official" Cocoon demonstration server, which could get its content from xml.apache.org (xdocs from cvs, log summaries) The remote server could easily regularly get the data via cvs update over ssh2. Whatever happens, i believe that we *must* have a Cocoon demonstration server somewhere. This i could never understand when i started to explore Cocoon. Cocoon seemed so wonderful, yet the website was a klutz. Then i figured out that it was a static website ... relief.
