We´re running our cocoon-based solution using the following configuration:
os: redhat 6.5
system: compaq proliant 1.1 Ghz, 256 Mb RAM
servlet-engine: tomcat 3, latest
web service: apache 1, latest stable
jdk: j2se 1.3.1 from sun

This configuration really performes.
We haven´t done any scalability tests yet.
