Just use a proper encoding for the XML file (i.e. UTF-8) and a UTF-8-able editor (under Windows i.e. XML Spy or JBuilder). Then you can just type the umlauts as any other chars in your document without problems. The HTML Serializer by default will encode them when doing HTML output to iso encoding like ü etc.
