Ok, lets assume you are using FOP. FOP is not terribly good with memory allocation. There have been many discussions about this on the fop mailing lists and it is one of the main reasons why people want a rewrite of the whole thing. There are some things you can try to do to make sure FOP can free memory every page or so.
