Cool! Nice step in getting people up to speed with Cocoon quickly.
As you mention, it would be good to add this to the wiki if it's ok for you.
Just two comments:
-you might want to include a mention of "build clean" in case the user has been experimenting before
-maybe adding a "what next" section at the end would be useful.
A minimalist "what next" that I can think of is suggesting that people edit welcome.xml or welcome.xslt and notice that the changes are reflected in the browser.
