I am now wondering what the preferred way to disconnect from the
testserver is. It's not immediately apparent how to remove
/coda/testserver.coda.cs.cmu.edu/ from the filesystem now that I'm done playing with it. Does it go away on it's own?

Have a look at /etc/coda/realms or realms.conf and /etc/coda/venus.conf Venus reinit will probably be necessary....

Do I now need to create a coda filesystem (volume?) on my server and
insert all my media into it?

Yep ...
Create you rootvolume and your firsts coda volume to store data in codafs....
You can use any venus client ( the Xbox ) to put files in volumes....

If I use my server as a workstation, do I
have to use coda client/server protocols to access the same content locally?

Yes...
Server and client are really distinct....
If you want you server to acces data in coda you'll need to install venus on the server
