Expand and clarify the content in dev/breeze/doc/ci/05_workflows.md to
describe Airflow’s composite workflow architecture, branch-specific
testing behavior, and workflow grouping in more detail.
Changes include:
- Added explanation of composite workflows and their purpose
- Detailed test flow from build-info through finalization
- Clarified branch-specific test coverage differences
- Updated tables for workflow groups and individual jobs
- Improved structure for readability and consistency
