Closing this. Changing Variable and Dag run PATCH to reject unknown `update_mask` fields is a REST behavior change with no reported problem, and it leaves connections, pools and task instances ignoring them, so the API becomes inconsistent. The new `test_patch_with_comma_joined_update_mask_rejects_unknown_field` fails on every backend.
