### Description
`WeaviateTestResource` throws `IllegalStateException` when
`CAMEL_QUARKUS_START_MOCK_BACKEND=false` is set without `WEAVIATE_API_KEY` and
`WEAVIATE_HOST`:
```
Set WEAVIATE_API_KEY and WEAVIATE_HOST env vars if you set
CAMEL_QUARKUS_START_MOCK_BACKEND=false
```
The Kubernetes tests already handle this case:
[CamelQuarkusKubernetesServerTestResource](https://github.com/apache/camel-quarkus/blob/main/integration-tests/kubernetes/)
src/test/java/org/apache/camel/quarkus/component/kubernetes/it/CamelQuarkusKubernetesServerTestResource.java)
uses the real cluster only when the mock backend is disabled and
`quarkus.kubernetes-client.api-server-url` is set, otherwise it starts the mock
server.
The Weaviate tests should follow that precedent: use the real backend only
when the mock backend is disabled and both variables are set, otherwise start
the Weaviate container.
