Backport of #27826 to `camel-4.22.x`, prepared for review while the main PR is pending. The 4.22.x launcher scripts have the same wildcard-selection defect: a sources JAR can be selected instead of the executable launcher JAR. Apply the same sources-JAR exclusion in both scripts and the same Unix and Windows regression tests. The patch applies without conflicts.
