Backport of #27813 (CAMEL-25534) to `camel-4.22.x`: the `subject` option and the header-override section of the camel-mail docs say the `Subject`, `To`/`CC`/`BCC` and `From` headers are ignored unless the matching `useHeader*` option is enabled (all default to `false` since 4.21, on this branch too). One conflict, resolved by taking the original commit's hunk: on `main` the YAML tab of the header-override example was already in the canonical `- route:` form, on `camel-4.22.x` it was the bare `- to:` form, so that tab now reads as on `main` (in `mail-component.adoc` and its catalog mirror).
