CAMEL-25378: Fix validate() return type and doc inaccuracy

    - Fix WhenMessageValidationSpec.validate() to return the correct
covariant type so .validate(...).then().respond() chains compile
    - Fix docs: unmatched exchanges pass through silently, not as failures
