We need to migrate `camel-jq` to `jackson-jq` 2.x. Currently, only an [alpha release](https://github.com/eiiches/jackson-jq/releases/tag/2.0.0-alpha2) is available. I have a [branch](https://github.com/jamesnetherton/camel/tree/camel-jq-jackson-jq-2-upgrade) with the upgrade. It depends on the wider effort to upgrade the Camel core to Jackson 3. We'll also need to upgrade this project to a Quarkus 4 compatible `quarkus-jackson-jq`.
