Closing this as a usage question, sorry it stayed open so long. On the sink side `AWSKafkaAvroConverter`, like any Avro converter, turns the record value into a Kafka Connect `Struct`, and Camel has no type converter from `Struct` to the `byte[]` that the RabbitMQ producer sends, hence the `NoTypeConversionAvailableException`. Two options that do not depend on AWS Glue: add the CKC `org.apache.camel.kafkaconnector.transforms.SchemaAndStructToJsonTransform` SMT with `schemas.enable=false` to send the record as JSON, or use `org.apache.kafka.connect.converters.ByteArrayConverter` to forward the original bytes unchanged; on 4.22.x the RabbitMQ sink is `camel-spring-rabbitmq-sink-kafka-connector`.
