Great idea! Also, the jekyll project maintains pre built docker images:

Abd are available on dockerhub:

https://hub.docker.com/r/jekyll/

We may also want to update our GitHub actions to use this container so that the 
local build/test process is exactly the same as what GitHub actions publishes.
