Problem Summary: Add fault-injection coverage for Iceberg deletion vector
reading. The tests now cover V1/shared helper behavior for missing files, short
reads, should_stop cancellation, corrupt payloads, large deletion vectors, and
concurrent reads, and the existing Iceberg deletion vector regression includes
debug point failures for injected IO error and cancellation paths.

- Attempted ./run-be-ut.sh --run
--filter="IcebergDeleteFileReaderHelperTest.*:IcebergV2ReaderTest.IcebergTableReaderAppliesDeletionVectorFile"
on [email protected]; the full run was blocked by unrelated existing
format_v2 build errors around FileColumnPredicateFilter,
column_predicate_filters, and _record_scan_rows.
