### What problem does this PR solve?
Problem Summary: Iceberg timestamptz columns can be exposed as DATETIMEV2
when timestamp timezone mapping is disabled, while the native Iceberg writer
schema remains timezone-aware. The FE previously coerced sink expressions using
the compatibility catalog type, which could send DATETIMEV2 columns to a
timezone-aware Arrow target. Derive the writer coercion schema from the native
Iceberg schema so timestamptz values use TIMESTAMPTZ, and share the native
schema construction with IcebergTableSink.
