+1 on this feature.
I think a catalog migrator could be useful in a broader scenario where it's
not just HMS to HMS migration, this could be a HMS to JDBC migration where
record format or target storage type could change. Another scenario is user
being on a different Rest Catalog Service and want to migrate to Polaris JDBC
Catalog.
