[MINOR] chore: bump version to 2.0.0-SNAPSHOT (#11821)
## What changes were proposed in this pull request?
Bump the project version from 1.4.0-SNAPSHOT to 2.0.0-SNAPSHOT across
all relevant files:
- `gradle.properties`
- `clients/client-python/setup.py`
- `clients/filesystem-fuse/Cargo.toml`
- `mcp-server/pyproject.toml`
- `dev/charts/gravitino/Chart.yaml` and `values.yaml`
