### Describe what's wrong
`GravitinoConnectorPluginManager.createConnector` logs the full connector
configuration at INFO after successful creation. This configuration can
contain plaintext AWS keys, OAuth2 credentials, and database passwords.
### Error message and/or stacktrace
Log shape, with credential values omitted:
```text
create connector <name> with config {<configuration including credentials>}
successful
```
### How to reproduce
1. Configure a catalog with credentials used by the underlying Trino
connector.
2. Trigger catalog loading and successful connector creation.
3. Inspect the INFO log from GravitinoConnectorPluginManager.
### Additional context
Remove the configuration from this log and retain the connector name.
