Version 0.9.9 is very old at this point, having been released around two years
ago. There have been several releases since Guacamole moved to the ASF, with
the latest release being "0.9.13-incubating":

Please retry against the latest version of Guacamole. If the problem still
occurs, please describe:
# How are you typing Chinese in these cases? Using an IME?
# Assuming you are using an IME, is the IME running locally (on the machine
with the browser) or remotely (within the remote desktop)?
# When typing, are you using Guacamole's "text input" mode?
