I have tested your example keys "áàâ" with Guacamole 0.9.12. It works with
Windows client and RDP (German keymap). It is not working with XRDP 0.9.1
(latest) with XOrg on Ubuntu 17.03. It is a problem in XRDP and not Guacamole.
