S3EventsHoodieIncrSource reader supports different file formats .
For each of these sources, spark reader supports options.
Example , for csv -> "header" : "true" .
We need to support these options as json string in S3EventsHoodieIncrSource as
deltaStreamer config
`hoodie.deltastreamer.source.hoodieincr.spark.datasource.options`
