HoodieAvroUtils, AvroSchemaUtils, AvroSchemaCompatibility,
AvroSchemaEvolutionUtils, etc.
HoodieAvroUtils and AvroSchemaUtils especially seem to have no apparent
difference. They both just house utils for avro.
This can cause us to rewrite methods that we already have because we are not
looking the correct class. We need to organize our schema utils.
