The payload deprecation is missing a few key elements for handling deletes
in the DefaultHoodieRecordPayload and the Debezium Payloads. This PR aims to
address the remaining gaps found in testing and adds regression tests to match
the cases discovered.

- Upgrade to v9 and table creation will now set the delete marker field and
value for the `MySqlDebeziumAvroPayload` and `PostgresDebeziumAvroPayload`
- Fixes the ordering values set for `MySqlDebeziumAvroPayload` in table
creation
- Adds method to table creation for the delete field and marker values
- Upgrades to v9 will set the delete field and marker configs if they are
also set in the write config
- Updates tests to ensure the proper values are used for all of these configs
