This PR reduces the number of ways that a developer can get the non-null
type from the schema to ensure consistency going forward.
This also updates the implementation to allow users to get the non-null type
of complex unions to simplify the code

- Removes utils for getting the non-null schema and updates the code to call
`getNonNullType` instead
- Updates `getNonNullType` to work for unions with more than 2 types and
adds optimizations for this case
