Let me update the scope of this PR to just focus on remaining parquet schema/annotation related changes When I first made this PR I was mainly concerned about how to correctly infer/handle parquet variant <-> Flink variant. But now that issue is resolved (by other PRs that added Flink version-specific adapter and the fact that we have consensus on only supporting specific paruet-java/Flink versions) I see now that there are a few more file changes needed for complete Flink unshredded write support.
