   A bounded FLIP-27 HoodieSource read restored from a checkpoint/savepoint 
reuses the persisted split set and never re-enumerates, so resuming after 
changing read.start-commit / read.end-commit or the partition selection 
silently reads the checkpoint's old scope with no error and no warning.
   
   Capture a scope token (table path/type, query type, start/end commit bounds, 
pruned partitions) in HoodieSplitEnumeratorState, version-gate the 
enumerator-state serializer (1 -> 2) so pre-existing checkpoints restore 
unguarded, and on restore of a bounded read fail fast from the enumerator's 
start() (wrapped in SuppressRestartsException) with an actionable message when 
the scope token differs. Streaming reads resume-and-continue and are left 
unguarded.
