### Describe the issue this Pull Request addresses Closes #20044 `mvn versions:set` cannot reach `docker/trino/shim/pom.xml` because the file is outside the reactor and its parent is `trino-root`. During the 1.2.1 finalize, every other pom moved to `1.2.1` but the shim stayed at `1.2.1-rc2`. ### Summary and Changelog The shim's `dep.hudi.version` now gets bumped every time the release version is set. - `scripts/release/cut_release_branch.sh`: new `set_trino_shim_hudi_version` helper, called right after both `versions:set` calls (master SNAPSHOT bump and release-branch RC bump). It uses `sed -i.bak` and removes the backup, so it works with both BSD and GNU sed. - `release/release_guide.md`: the bug-fix, RC and finalize version-bump steps each get the matching `sed` command, plus a `git grep` check that no pom still carries the old version. ### Impact Only the release tooling and docs change.
