`SimpleDateFormat` as a NOT thread-safe component is a very peculiar
data-structure that have been source of problems in the past (HUDI-2831,
HUDI-1794).
As such we should steer away from it and instead rebase all of its usages onto
(immutable, thread-safe) `DateTimeFormatter`
