   @hubcio I've been reviewing the existing connectors and noticed that, with 
the exception of the Iceberg connector, they all appear to write messages to a 
single destination. The Iceberg connector, however, seems to support routing 
messages to multiple destinations/tables.
   
   Is the intended design for connectors to target a single destination by 
default, with Iceberg being a special case? Or should connectors generally 
support configurable routing to multiple destinations? I'd like to better 
understand the expected connector model before proceeding with implementation.
