docs: use the latest tag in the About page docker run example (#80)
The paragraph above this example explains that latest images are the
stable releases and edge images track master, and the Versioning section
says edge builds are not recommended for production use. The example
then ran apache/iggy:edge, so copying it gave a new user an unstable
build.
