The scope of this ticket is to restore the functionality with the following
behavior:
1. declare the profile name and the mapped class in the
application.properties.file e.g.
`org.kie.dmn.profiles.signavio=org.kie.dmn.signavio.KieDMNSignavioProfile`
2. provide the actual implementation of the profile, either directly in
the kogito app, or inherited by some dependency
