I think the [Data Index standalone service](https://kie.apache.org/docs/10.1.x/sonataflow/serverlessworkflow/latest/data-index/data-index-service.html) references obsolete images `quay.io/kiegroup/kogito-data-index-postgresql:latest`. I would like to change two lines in the docs to point to `{sonataflow_dataindex_postgresql_imagename}:{operator_version}` instead.
