### Description Although there is a unit [test](https://github.com/apache/incubator-kie-kogito-apps/blob/main/data-index/data-index-storage/data-index-storage-postgresql/src/test/java/org/kie/kogito/index/postgresql/query/ProcessInstanceEntityQueryIT.java#L84-L157) that validates the query, https://github.com/apache/incubator-kie-kogito-apps/issues/2284 was a consequence of the lack of an integration test that warn us that the JSON_QUERY capability was missed. Therefore, this is a follow up issue to review IT test for data index postgressql and include there queries over "variables" and "metadata" to avoid the same issue to reappear again. ### Implementation ideas _No response_ -- This is an automated message from the Apache Git Service.
