### Description
This pull request consolidates all dependency upgrades and security fixes
from **PR #7266** and **PR #7267** into a single, clean changeset, with all
newly introduced XML/CVE comments stripped to adhere to Apache development
standards.
### Upgrades and Fixes Included:
- **Quarkus**: Upgraded to `3.33.4.1`, Quarkus Camel to `3.33.3`, and
aligned platform BOMs.
- **Spring Framework / Boot**: Upgraded Spring Boot to `4.1.2`, Spring
Framework to `7.0.10`, and Spring Cloud to `2025.1.3`.
- **Apache Kafka**: Upgraded `kafka-clients` and `kafka-streams` to `4.2.2`
and managed streams alongside clients.
- **MongoDB**: Upgraded the MongoDB Java driver and BSON library to `5.14.0`.
- **Other Security Fixes**:
- Upgraded `logback` to `1.6.5`, `jackson` to `2.22.4` and `3.1.8`,
`lz4-java` to `1.12.0`, and `objenesis` to `3.6`.
- Cleanly removed the unused `json-smart` / `json-path` dependency chain,
along with `JsonSmartSubstitutions.java` GraalVM substitution.
- Resolved `KafkaProcessInstancesIT` test failure by explicitly creating
Kafka topics required by Kafka 4.2+.
