Adds PSEUDOTERM as selected Kconfig option on lvglterm demo defconfigs. Required after changes on lvgl_term example app. ## Summary This PR adds PSEUDOTERM Kconfig option on defconfigs that use the LVGL Terminal example. Required due to changes on [nuttx-apps #3742](https://github.com/apache/nuttx-apps/pull/3742). ## Impact Allows proper use of lvglterm example after changes on app requirement. ## Testing Tested on `esp32p4-tab5` board, example output is on [nuttx-apps #3742](https://github.com/apache/nuttx-apps/pull/3742), pending tests from other user for different board. -- This is an automated message from the Apache Git Service.
