I quickly browsed the geoJSON spec here:

Is the intention of the service to return geoJSON with all of a product's
metadata listed in the 'properties' element within a 'Feature'? This seems
like the most likely place since the properties element is able to store data
as key: value pairs, and multi-values could be encoded as a JSON array.
This looks like a really cool issue. Glad you created it.
